Curry Chicken

3 tbsp curry

2 cloves garlic sliced

2 tomatoes (diced)

4 tbsp olive oil

1 sprig thyme

1lb chicken breast

1 can chick peas

2 shallots

1 tsp cumin

1 cup water or organic chicken broth


Cut chicken breast in small pieces. Add 3 tbsp of curry, tomatoes, thyme, onions and cumin to the chicken, marinate for 1hr. Heat pot with olive oil. Place the garlic clove in the oil, cook until golden brown, add 1 tbsp curry to the oil the immediately add the chicken cook for 4 minutes then add the chick peas. Add 1 cup of water of chicken broth bring to a boil adjust the seasoning if needed. Simmer and cook for 20 minute until chicken is done. Serve with hot Paratha and cold mango chutney or steamed brown rice.
