Italian Pasta Primavera

Delicious 30-minute meal

Ciò è solo squisita, or "this is just delicious." From start to finish you can make this meal in less than 30 minutes. Utilizing fresh herbs, vegetables, chicken or shrimp this recipe is sure to please your taste-buds. You can be very flexible with the recipe, switching different types of pasta, veggies and meat. Make this your own to fit your family lifestyle and keep it healthy.

Ingredients (Serve 4)

3 tablespoon olive oil

3 cloves minced garlic

½ lb chicken breast / shrimp

1 cup fresh broccoli  

1 cup sliced button mushrooms

1 cup assorted bell peppers (red, yellow, orange)

1cup fresh baby spinach

1 cup grape or cherry tomatoes, sliced in 1/2  

1 cup low-sodium chicken stock

Salt & Pepper to taste  

3/4 pound penne pasta

2 tablespoons fresh chopped rosemary, sage, basil and oregano leaves 

Parmesan Cheese for garnish

Directions

Cook pasta according to package directions; drain. Spread on sheet pan griddle with a little olive oil. Heat the oil in a large sauté pan over medium-high heat. Cook garlic until soft, about 1 minute. Add chicken or shrimp and cook thoroughly. Add the peppers, mushrooms, broccoli, and cook until softened but with a little crunch. Toss pasta and ½ of the fresh herbs with vegetables. Add stock if necessary, then the spinach and tomatoes, and cook for 2 minutes. Garnish with the parmesan cheese.
