Spicy Shrimp

Start the week off healthy with a spicy, fresh shrimp dish

In the Caribbean eating spicy food is the way of life. The Caribbean is a melting pot of different cultures from Asian, African, East Indian, French, English, Spanish, and Middle-Eastern. Our intertwined food makes us one. This recipe is very popular throughout the islands, it's flavorful, spicy and you can use it for any type of meat or fish. I serve it with a tropical fruit salad with mango, papaya and pineapple. DELISH!!!

Spicy Shrimp (Serves 6)

Ingredients:

1 1/2lb of raw jumbo shrimp (peeled and deveined)

3 tbsp extra virgin olive oil

Spicy rub:

1/2 cup ground allspice berries

1/2+ cup packed brown sugar

4 garlic cloves

1 Scotch bonnet pepper

2 tablespoons thyme leaves

1 bunch scallion

1 teaspoon cinnamon

1/2 teaspoon nutmeg

Salt and pepper to taste

DIRECTIONS:

Place all the spicy rub ingredients in a food processor and blend until smooth.

Note: If it’s too spicy, add ¼ cup of honey.

Place shrimp in a large bowl, add the spicy rub, mix and marinate in the refrigerator for a least 1 hour.

Heat the oil in a large sauté pan over medium-high heat. Add shrimp and cook, stirring occasionally for 3-4 minutes, until it’s no longer pink. Remove from the heat and serve on a bed of tropical fruit salad with a vinaigrette.
