Stuffed Chicken Breast

Apples, cranberries and fresh herbs give this dish its flavor

I must say this is one of my students' top dishes to make.  The combination of the apples, cranberries and fresh herbs give the chicken so much flavor and taste, you can serve it simply with a side salad and orzo pasta.

Ingredients

2 4oz chicken breast

1 tbsp butter

¼ cup dried cranberries

¼ cup apples

½ cup stuffing

1 tbsp fresh herbs (rosemary, sage, thyme)

Salt and pepper for seasoning

¼ cup chicken stock

2 pieces of cooking twine

2 tbsp olive oil

Directions

Preheat oven to 400 degrees. In a small pot melt the butter then add the bread crumbs, fresh herbs, dried cranberries and apples add small amount of stock to soften the mix. Take a mallet and carefully flatten the chicken breast without breaking the meat. Season with salt, pepper and fresh herbs. Place the stuffing on the chicken and roll tightly. Secure with 2 pieces of cooking twine.  In a hot frying pan add 2 tbsp of olive oil pan sear the chicken on both sides to a golden brown color. Remove the chicken and place in a baking dish bake in the oven for 15 minutes. Remove twine and layer on top of green salad.
