Fruit Salad

Ingredients:

  • 1/4 red delicious apples sliced
  • 1 tsp lemon juice
  • ¼ cup grapes sliced in half
  • ½ kiwi dice
  • ½ bananas
  • Mint leaves (TO TASTE)

Directions:

Place apples in a bowl with lemon juice

Add the fruits together and mix, garnish with mint leaves serve immediately.

Chicken Salad Sandwich

Ingredients:

  • 1 whole wheat bun or 2 slices of whole grain bread
  • 2 tbsp extra virgin olive oil (Also called EVOO)
  • ¼ cup portabella mushrooms
  • ¼ cup sliced onions
  • 4oz chicken breast / thin sliced organic turkey or chicken breast
  • 2 tbsp diced celery
  • ½ tbsp fresh parsley
  • 1 slice Swiss cheese
  • 5 slices cucumbers
  • 3 slices tomatoes
  • 2 leaves of lettuce
  • Salt & pepper to taste

Directions:

In a hot frying pan add EVOO, cook onions until soft and brown.  Add the mushrooms and cook for 3 minutes. Season with salt & pepper then remove from the stove.

Cut bun in half, spread the bottom with slight mayo then place the lettuce, add the chicken, then cucumbers, tomatoes cheese onions and mushrooms and top it for with the bun. Pack your lunchbox with fresh fruit salad, 100 percent juice-box and 3 organic ginger snap cookies.
